Passionfruit Pink Gin Martini

Ingredients

• 1 passionfruit, halved
• 1 lemon, juiced
• 1 egg white
• 100ml Polka Non-Alc Botanical Spirit
• 2 tsp sugar syrup
• Handful of ice
• Polka Sparkling - to serve
• Sprig of rosemary - to serve 

Directions (Rosemary Syrup)

• Scoop the flesh from passionfruit into cocktail shaker
• Add the lemon juice, egg white, spirit and syrup and shake vigorously until frothy
• Add the ice and shake. Double strain into martini glasses 
• Top up the martinis with the sparkling and garnish with the remaining passionfruit and rosemary
